Growing up, most Friday nights were fried-fish nights at our house, and we kids weren't that happy about it, either. I remember a lot of scrambled eggs taking the place of golden brown fried fish with heads still intact. I also remember the fish was rolled in cornmeal before frying. That's not how I do mine, today. The cornmeal seems to take away from the flavor. Plus, the texture of cornmeal is not pleasing to me. I like to roll my fish in flour. Here, I'll tell you how this South Carolina girl fries fish. Truly, I am not a cook, but my hubby and all who have eaten my fried fish rave about it. And I like it, too!Image provided by Koh Kho King
